Chef Choi has a long history in sushi that comes from studying in Japan and his previous experiences having owned multiple Japanese cuisine restaurants in Boston, as well as working for a Japanese airline company in food production. Additionally, Chef Choi uses a special Japanese marinade method, learned from a Japanese master chef who served the Japanese Emperor, that makes his salmon stand out. In 2018, Chef Choi partnered with Chef David Burke to incorporate sushi into the Adelphi Hotel. He has since continued to partner with David Burke as well as other various restaurants, resorts and hotels to serve people his authentic sushi. Currently, he has branches in New Jersey, New York, and Vermont, and just opened his thirteenth sushi bar.
